Virgin Mojito Sorbet

Mojitos are definitely my favorite cocktail, if I have to pick one. The sour & bitter lime along with the sweet sugar is just amazing! I enjoy it with white rum on few occasions, but also love it in the virgin/non-alcoholic version! Seeing as the mojito is my absolute favorite cocktail, I had to try to make it into a sorbet - and it turned out deliciously fresh and yummy!

Mojito er helt sikkert min yndlings cocktail, hvis jeg skal vælge én. Den sure og bitre lime sammen med det søde rørsukker - Fantastisk kombination! Jeg nyder den med hvid rom af og til, men jeg elsker den også virgin/uden alkohol! Eftersom mojito er min yndlings cocktail, så var jeg nødt til at prøve at lave den i sorbet version - og den blev simpelthen så lækker og frisk!

RECIPE/OPSKRIFT: 

 
- 4 dl cane sugar/rørsukker
- 4 dl water/vand
- 1 dl fresh lime juice/friskpresset lime juice
- 2 handfulls of mint leaves/håndfulde mynteblade
- Zest from 2 limes/Skallen fra 2 lime
- (½ dl white rum if you don't want the virgin version!/½ dl lys rom, hvis du vil have din sorbet med rom!

1. Mix sugar and water in a pan on medium heat. When the sugar has melted and it's a sirup, leave to cool. // Rør sukker og vand sammen i en gryde over medium varme. Lad siruppen køle af. 
2. Grate the zest from the limes, squeeze the juice and chop the mint leaves very finely, while the sirup is cooling. // Riv skal af lime, pres limesaft og hak mynte meget fint, imens siruppen køler af. 
3. Add zest, lime juice and chopped mint leaves into the cold sirup. // Tilføj skal, limesaft og hakket mynte i den kolde sirup. 
4. Pour mixture into an ice cream maker and let it turn for about 50 minutes, before putting the mixture into the freezer. Let it sit in the freezer for 4 hours before enjoying! (If you do not have an ice cream maker, make sure to stir the sorbet once per hour until it's completely frozen) // Hæld blandingen på ismaskinen og lad den køre i 50 minutter. Put den derefter i fryseren og lad den står der i 4 timer, før din mojito sorbet nydes! (Hvis du ikke har en ismaskine, skal du sørge for at røre rundt i din sorbet én gang i timen, indtil den er helt frossen!)
